Cranberry Brownies

Ingredients

I cup water

1 cup sugar

1 cup cranberry’s

2 tablespoons butter or margarine

1 tablespoon chopped mixed peel

2 cups of Healthy Baker plain flour

1 teaspoon carb soda

1 teaspoon cream of tartar

1 teaspoon mixed spice

Directions

  1. Place water, sugar sultanas, butter and mixed peel in a sauce spoon.  Allow to boil slowly.
  2. Let simmer for 5 minutes then set aside to cool, place in bowl and add flour, soda, cream of tartar and mixed spice.
  3. Pour into a greased lamington tin and bake at 190° for 20- 30 minutes or until well risen and evenly browned.
  4. When cold cut into slices.
