Oven baked fish dippers with avocado mayonnaise
Ingredients
"Kids will love these healthy 'fish fingers'. For the adults - add a few drops of Tabasco sauce to the avocado mayonnaise."

Cooking time: 25 minutes
Makes: 12 fish dippers
- 500g thick, firm, white fish fillets (such as ling, flathead or ocean perch)
- 1 egg
- 2 teaspoons water
- 1/3 cup Healthy Baker Plain Flour
- 1 1/2 cups fresh white breadcrumbs
- sea salt, to serve (optional)
- avocado mayonnaise
- 1 small avocado, mashed
- 1/2 cup fat reduced mayonnaise
- 1 tablespoon lemon juice
Directions
- Preheat oven to 200ºC. Line an oven tray with baking paper.
- Cut fish into fingers about 2.5cm x 8cm.
- Beat egg and water in a bowl. Place flour and breadcrumbs in separate bowls. Dip fish pieces in flour, then egg and lastly in breadcrumbs. Place on prepared tray. Bake 10 minutes, then turn. Continue baking for 15 minutes longer or until lightly golden.
- Meanwhile, combine all avocado mayonnaise ingredients in a bowl.
- Sprinkle fish with salt, if desired. Serve with avocado mayonnaise.
Holly’s tip: to make fresh white breadcrumbs use day old white bread (crusts removed) and process in a food processor
