Oat, honey & raisin biscuits
Ingredients

- 150 g butter
- 1/4 cup honey
- 1 1/4 cups Healthy Baker Self Raising Flour
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/2 teaspoon bicarbonate of soda
- 2/3 cup raw sugar
- 1 cup rolled oats
- 2/3 cup raisins
Directions
- Preheat oven to 150ºC. Line 2 large baking trays with baking paper.
- Place butter and honey in a small saucepan. Stir over a medium heat until butter has melted. Set aside for about 30 minutes to cool slightly.
- Sift flour, cinnamon, ginger and bicarbonate of soda into a large bowl. Stir in sugar, oats and raisins. Pour in butter and stir to combine.
- Place a tablespoonful of mixture onto a prepared tray, then flatten to about 1cm thick. Continue with remaining mixture, leaving about 3cm between each biscuit to allow for spreading.
- Bake for 12 minutes, or until golden brown, swapping tray positions halfway through baking time.
- Cool on trays for 10 minutes, then transfer to a wire rack to cool completely.
