Macadamia & apricot slice

Ingredients

"Perfect for a lunchbox treat or serve with afternoon tea."

Makes: 12

  • 125g butter, softened
  • 1 cup brown sugar
  • 2 teaspoons vanilla extract
  • 1 egg
  • 1 cup Healthy Baker Self Raising Flour
  • 1 cup coarsely chopped macadamia nuts
  • 1 cup chopped dried apricots
  • 1/2 cup white chocolate chips

Directions

  1. Preheat oven to 170ºC. Grease and line a 28cm x 18cm x 3cm slice pan with baking paper, allowing a 3cm overhang at each long end (this will make the cooked slice easy to remove).
  2. Using an electric mixer, beat butter, sugar and vanilla in a medium bowl until creamy. Beat in egg. Use a spoon to stir in sifted flour, then stir in macadamia nuts, apricots and chocolate chips.
  3. Press mixture evenly into prepared pan. Bake 30 minutes or until golden – the slice will still appear a little soft in the centre. Cool in pan, then remove and cut into pieces.
