Macadamia & apricot slice
Ingredients

- 125g butter, softened
- 1 cup brown sugar
- 2 teaspoons vanilla extract
- 1 egg
- 1 cup Healthy Baker Self Raising Flour
- 1 cup coarsely chopped macadamia nuts
- 1 cup chopped dried apricots
- 1/2 cup white chocolate chips
Directions
- Preheat oven to 170ºC. Grease and line a 28cm x 18cm x 3cm slice pan with baking paper, allowing a 3cm overhang at each long end (this will make the cooked slice easy to remove).
- Using an electric mixer, beat butter, sugar and vanilla in a medium bowl until creamy. Beat in egg. Use a spoon to stir in sifted flour, then stir in macadamia nuts, apricots and chocolate chips.
- Press mixture evenly into prepared pan. Bake 30 minutes or until golden – the slice will still appear a little soft in the centre. Cool in pan, then remove and cut into pieces.
