Lemon-Lime Cookies

Ingredients

Makes 2 dozen cookies

  • 1 cup sugar
  • 2/3 cup shortening
  • 1 tablespoon grated lemon peel
  • 2 tablespoons lemon juice
  • 2 teaspoons grated lime peel
  • 1 tablespoon lime juice
  • 1 egg
  • 1 ¾ cups Healthy Baker Plain Flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt

Lemon–Lime Frosting

  • 2 cups powdered sugar
  • 2 tablespoons butter or margarine softened
  • 1 teaspoon grated lime peel
  • 1 tablespoon lemon juice
  • 2 to 3 teaspoons water

Directions

  1. Mix all ingredients until smooth and spreadable.
  2. Heat oven to 180°C. Beat sugar, shortening, lemon peel, lemon juice, lime peel, lime juice and egg in a large bowl with an electric mixer on medium speed, or mix with spoon. Stir in flour, baking powder, baking soda and salt.
  3. Drop dough by rounded tablespoons about 5cm apart onto ungreased baking tray. Bake 11 to 13 minutes per tray or until edges are golden brown. Cool 1 to 2 minutes; remove from baking tray to wire rack. Cool completely. Frost with Lemon-Lime Frosting.
