Butterscotch Freeze 'n' Slice Cookies

Ingredients

Makes 60 cookies

  1. 1 cup sugar
  2. 1 cup firmly packed brown sugar
  3. 1 ½ cups margarine or butter softened
  4. 3 eggs
  5. 4 ½ cups Healthy Baker Plain Flour
  6. 2 teaspoons baking powder
  7. 1 teaspoon baking soda
  8. 1 teaspoon cinnamon
  9.  ½ teaspoon salt

Directions

  1. Line two 8x4 inch loaf pans (20.3cmx10.2cm) with foil, allowing foil to extend above sides of pans.
  2. In large bowl combine sugar, brown sugar and margarine; beat until light and fluffy.
  3. Add eggs; blend well.
  4. Add flour, baking powder, baking soda, cinnamon and salt; mix well.
  5. Press half of the dough into each foil-lined pan. Fold foil over dough to seal; freeze 2 to 3 hours or until well chilled.
  6. Heat oven to 180°C. Lightly grease cookie sheets. Unfold foil; lift dough from pans. Remove foil; cut dough into ¼ inch slices. Place sides two inches apart on greased cookie sheets.
  7. Bake at 180°C for 8-12 minutes or until light golden brown. Cool for 1 minute; remove from cookie sheets.
