Easter Cheesy Zucchini Slice

Ingredients

“Serve hot or cold. Perfect for a light lunch with salad or as a lunch box treat.”

Cooking time: 40 minutes
Serves: 6-8


  • 1/3 cup olive oil
  • 1 onion, finely chopped
  • ½ red capsicum, finely diced
  • 4 slices (90g) shortcut bacon, trimmed and finely chopped
  • 3 medium zucchini, coarsely grated (about 400g)
  • 1 cup grated tasty cheese
  • ½ cup chopped fresh basil leaves
  • 5 eggs
  • 1 cup Healthy Baker Self Raising Flour
  • ground black pepper

Directions

  1. Preheat oven to 180ºC. Grease a 16cm x 26cm (base measurement) slice pan and line with non-stick baking paper.
  2. Heat 2 teaspoons of oil in a non-stick frying pan and cook onion, capsicum and bacon, stirring occasionally, for 5 minutes or until onion is soft.  Remove from heat and place in a large bowl to cool. Add zucchini, cheese and basil and stir to combine.
  3. In a separate bowl, lightly whisk eggs and remaining oil together, then add flour and pepper and whisk until smooth. Add to zucchini mixture and stir to combine. Spoon into prepared pan and smooth surface. Bake 35 minutes or until set. Stand 10 minutes, then slice and serve.
